I was just watching the new Aperture tutorials
(http://www.apple.com/aperture/tutorials). The quick preview works by
using the jpeg image which "most digital cameras" store inside a raw image
file. They don't say what "most" means. Does the Nikon D200 do that?

Yes: the jpeg you see in the camera's lcd is a full-size low quality
jpeg that is embedded in the raw file (if you pay attention you'll see
jpeg artefacts when you zoom in the image, even on the lcd). There's
also a thumbnail in there. You can extract the jpeg from the raw file
if you want (eg faststone viewer can do it for you-it uses dcraw).
